Even though summer is slowly fading, there’s no reason we can’t hold onto its flavors for a little while longer. This tasty lunch recipe takes 10 minutes, and incorporates mango, a summer favorite of mine. Adding one sweet element into a more savory dish is a great way to experiment with flavors. In this recipe, the mango and honey yogurt work with the carrot, bell pepper, onion, and romaine lettuce to create a fun and refreshing combination of flavors. 1 mango, cubed

1 large carrot, grated

¼ small red onion, diced

¼ red bell pepper, diced

9 large romaine lettuce leaves

1 ½ cups greek honey yogurt


Combine first four ingredients (through bell pepper) in a medium bowl. Mix to combine.

Spread a few tablespoons yogurt on a romaine leaf. Top with mango-veggie mixture. Serve and enjoy!
