THE INCREDIBLE CAULIFLOWER
Cauliflower is too often overlooked as broccoli’s boring cousin. It doesn’t help that many people don’t know any cauliflower recipes, and so just steam it up and serve it as a bland side. But cauliflower is so good for you! It is packed with antioxidants, contains 3 grams of fiber per serving, helps with increased blood flow, and is chock full of B vitamins. Since it’s in season in January, I thought I’d dig up some fun, flavorful, and healthy recipes that feature cauliflower. Enjoy!
Instead of serving a bland side of plain cauliflower, change it up with olive oil, garlic, and Parmesan cheese. This recipe requires very little prep time, and cooks up in 25 minutes. You’ll never go back to plain steamed cauliflower after this!
In this recipe, the cauliflower takes on a supporting role, but still provides a great amount of fiber and vitamins. The chicken broth, red pepper, and salt and pepper make sure that the puree is anything but bland, and the seared scallops provide a nice source of protein. Pair it with some steamed snap peas, and your dinner is ready!
Love Indian flavors but don’t love the expense of ordering out? Try this variation on traditional aloo gobi, with tofu taking the place of potatoes. This dish doesn’t even need a side – it’s a full meal on its own!
The nutty flavor of gruyère pairs well with cauliflower, while the panko adds some nice texture. You can prep everything the evening before, and assemble right before baking. Perfect!
